Our sheep eat a natural diet of grasses, legumes, and clover. We supplement with garden veggies when possible: brussel sprout leaves, pumpkins, and watermelon. As a regenerative and pasture based farm, we rotate our flock to fresh pastures regularly and they spend their entire lives with the option of being outdoors.
As a heritage breed, capable of flourishing on only grass, an Icelandic sheep yields smaller cuts than what you see at the grocery store. This variance can be convenient for mid-sized families and ensures that the flavor of the meat is characteristically mild and known to chefs internationally as a gourmet meat. It also means you can still stock up with a regular freezer.
Our lambs are processed by a family-owned butcher shop that is USDA inspected and respects our desire to make the process as humane and stress-free as possible for every animal. Each cut is inspected, labeled, and vacuum sealed to ensure ultimate freshness. We currently do not ship our lamb products, but limited delivery is available in the Chicago suburbs.
